Description

A quick and flavorful Mexican-inspired one-pan meal featuring ground beef, potatoes, bell peppers, and cheese.


Ingredients

2 tbsp avocado oil

1 lb red potatoes, cubed

1 lb lean ground beef

½ cup diced yellow onion

1 red bell pepper, diced

4 oz diced green chiles

2 ½ tsp chili powder

1 tsp ground cumin

½ tsp smoked paprika

¼ cup chopped cilantro

½ cup shredded cheese

Kosher salt and pepper to taste


Instructions

1. Heat oil in skillet, cook potatoes until golden.

2. Add ground beef, onions, and peppers; cook until beef is browned.

3. Stir in green chiles, spices, and cilantro.

4. Cook until potatoes are tender and beef is fully cooked.

5. Top with cheese and let melt. Serve hot.

Notes

Use ground turkey for a lighter version.

Top with avocado or sour cream.

Reheat leftovers in a skillet for best texture.
