Description

Mexican Lasagna is a hearty layered casserole with seasoned beef, beans, salsa, and melted cheese.


Ingredients

  • 2 pounds ground beef
  • 1 can (16 ounces) refried beans
  • 1 can (4 ounces) chopped green chiles
  • 1 envelope taco seasoning
  • 2 tablespoons hot salsa
  • 12 ounces uncooked lasagna noodles
  • 4 cups shredded Colby-Monterey Jack cheese, divided
  • 1 jar (16 ounces) mild salsa
  • 2 cups water
  • 2 cups sour cream
  • 1 can (2-1/4 ounces) sliced ripe olives, drained
  • 3 green onions, chopped
  • 1 medium tomato, chopped, optional

Instructions

  1. Preheat oven to 350°F.
  2. Cook ground beef over medium heat until no longer pink; drain.
  3. Stir in refried beans, green chiles, taco seasoning, and hot salsa.
  4. Layer one-third noodles, meat mixture, and 1 cup cheese in greased 13×9-inch dish.
  5. Repeat layers twice.
  6. Combine mild salsa and water; pour over top.
  7. Cover and bake 1 hour.
  8. Top with remaining cheese and bake uncovered 5-7 minutes until browned.
  9. Let stand 10-15 minutes.
  10. Garnish with sour cream, olives, green onions, and tomato.

Notes

  1. Drain beef well to prevent excess grease.
  2. Let casserole rest before slicing.
  3. Adjust salsa heat level to taste.
