Description

Creamy Mexican Roll-Ups made with lighter ingredients like fat-free cream cheese, sour cream, cheddar, olives, and green chiles. These tortilla pinwheels are quick party appetizers that require no cooking and simple preparation.


Ingredients

Scale
  • 1 package (8 ounces) fat-free cream cheese
  • 1 cup fat-free sour cream
  • 1 cup shredded reduced-fat cheddar cheese
  • 1 can (4 ounces) chopped green chiles, drained
  • 4 green onions, chopped
  • 1 can (4 1/4 ounces) chopped ripe olives, drained
  • 1 teaspoon garlic powder
  • 5 flour tortillas (10 inches)
  • Salsa, optional

Instructions

  1. In a small bowl combine cream cheese and sour cream until smooth
  2. Stir in shredded cheddar cheese, green chiles, green onions, olives, and garlic powder
  3. Spread the mixture evenly over each tortilla
  4. Roll each tortilla tightly into a log shape
  5. Wrap each roll in plastic wrap and refrigerate for 1 hour until firm
  6. Remove wrap and slice each roll into about 1 inch pinwheel pieces
  7. Serve chilled with salsa if desired

Notes

  1. Allow cream cheese to soften for easier mixing
  2. Refrigerate rolls before slicing to keep the pinwheels neat
  3. Use a sharp knife and wipe the blade between slices for clean cuts
  4. These roll-ups can be prepared several hours in advance and kept chilled
