Description
Creamy Mexican Street Corn Dip inspired by classic elote flavors. Sweet corn, lime, mayonnaise, sour cream, and Cotija cheese come together in a quick 20-minute appetizer perfect for parties.

- 4 cups corn kernels (fresh, frozen, or canned)
- 2 tablespoons salted butter
- 1/2 cup mayonnaise
- 3 tablespoons sour cream
- Juice of half a lime
- 1 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 2/3 cup crumbled Cotija cheese
- 1 tablespoon minced fresh cilantro
Instructions
- Melt butter in a large skillet over medium-high heat.
- Add corn kernels and saute for 8 to 10 minutes until they begin to brown and caramelize.
- Remove the skillet from heat and allow the corn to cool for about 10 minutes.
- Stir in mayonnaise, sour cream, lime juice, garlic powder, and cayenne pepper until well combined.
- Reserve a couple tablespoons of Cotija cheese and mix the remaining cheese into the corn mixture.
- Transfer the dip to a serving bowl.
- Top with the reserved Cotija cheese and fresh cilantro.
- Serve immediately with chips or refrigerate until ready to serve.
Notes
- Drain canned corn or thaw frozen corn before cooking.
- Allow the corn to cool slightly before mixing in the creamy ingredients.
- Feta cheese can substitute Cotija if needed.
- Serve warm with tortilla chips for best flavor.
