Ingredients

- 3/4 cup plus 2 tablespoons all-purpose flour
- 2 teaspoons granulated sugar
- 1/4 teaspoon salt
- 4 tablespoons cold unsalted butter
- 3 to 4 tablespoons ice water
- 1/4 teaspoon white distilled vinegar
- 1 tablespoon heavy whipping cream
- Cinnamon sugar for topping
- 1 fresh peach, sliced
- 3 to 4 ounces cream cheese
- 2 tablespoons honey
- 1 teaspoon lemon juice
- 1/8 teaspoon ground cinnamon
- 1/8 teaspoon ground ginger
Instructions
- Combine flour, sugar, salt, and butter until crumbly.
- Mix ice water and vinegar, then add to dough.
- Form dough into a disk and chill for 30 minutes.
- Slice peaches and cream cheese.
- Mix honey, lemon juice, cinnamon, and ginger.
- Preheat oven to 425°F.
- Roll and fold dough twice, then cut into 4 squares.
- Fold edges upward to form tart borders.
- Add cream cheese and drizzle with honey mixture.
- Arrange peaches on top.
- Brush pastry edges with cream and sprinkle cinnamon sugar.
- Bake 18 to 22 minutes until golden brown.
- Cool slightly and serve warm.

- Use fresh peaches for best results.
- Keep butter cold for flaky pastry.
- Tarts are best served the day they are baked.
