Description

Mini turtle cheesecakes combine creamy cheesecake with chocolate, caramel, and crunchy nuts in perfect bite-sized portions.


Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 4 Tbsp unsalted butter, melted
  • 16 oz full-fat cream cheese
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • Caramel sauce
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream
  • Chopped pecans

Instructions

  1. Preheat oven to 350°F and line muffin pan with liners
  2. Mix graham cracker crumbs and melted butter
  3. Press mixture into muffin cups and bake for 5 minutes
  4. Beat cream cheese and sugar until smooth
  5. Add vanilla and eggs, mix until combined
  6. Divide batter into muffin cups
  7. Bake 15-17 minutes until slightly jiggly
  8. Cool to room temperature then refrigerate for at least 4 hours
  9. Prepare ganache by heating cream and mixing with chocolate
  10. Top cheesecakes with caramel, ganache, and chopped nuts

Notes

  1. Refrigerate in airtight container up to 1 week
  2. Freeze up to 3 months with parchment between layers
  3. Thaw in refrigerator before serving
