Description

Tender slow-cooked chicken with ranch seasoning, savory au jus, buttery onions, and tangy pepperoncini. This easy crockpot dinner requires only 10 minutes of preparation and makes a comforting family meal.


Ingredients

  • 3 to 4 boneless, skinless chicken breasts
  • 1 medium yellow onion, diced
  • 1 packet au jus gravy mix
  • 1 packet ranch dressing mix
  • 8 to 10 whole pepperoncini peppers
  • 3/4 cup pepperoncini juice
  • 1/2 cup unsalted butter, sliced
  • Nonstick cooking spray

Instructions

  1. Lightly coat a 6-quart slow cooker with nonstick cooking spray or add a slow cooker liner.
  2. Spread the diced onion evenly across the bottom of the slow cooker.
  3. Pat the chicken breasts dry, trim visible fat, and arrange them over the onion.
  4. Sprinkle the au jus gravy mix and ranch dressing mix evenly over the chicken.
  5. Place the pepperoncini peppers around and on top of the chicken.
  6. Distribute the sliced butter across the top, then pour the pepperoncini juice around the chicken.
  7. Cover and cook on high for 4 to 5 hours or on low for 6 to 7 hours.
  8. Check that the thickest piece of chicken reaches an internal temperature of 165°F.
  9. Transfer the chicken to a cutting board and shred it into large pieces with two forks.
  10. Return the shredded chicken to the slow cooker, stir it through the sauce, and rest for 5 to 10 minutes before serving.

Notes

  1. Use chicken breasts of similar thickness so they finish cooking at the same time.
  2. Boneless, skinless chicken thighs may replace the chicken breasts.
  3. Taste the finished sauce before adding salt because the seasoning packets and pepperoncini brine contain sodium.
  4. For a lighter sauce, reduce the butter to 1/4 cup.
  5. Store leftovers with the sauce in an airtight container in the refrigerator for up to four days.
