Description

Easy mixed berry compote cake filling made with frozen berries. Tart, glossy, and perfect for cakes and cupcakes.


Ingredients

Scale
  • 2 ½ tablespoons Instant Clearjel or 2 tablespoons cornstarch
  • 100 grams sugar
  • 8 ounces frozen mixed berries
  • 1 ½ tablespoons lemon juice

Instructions

  1. Whisk sugar and thickener together.
  2. Add berries and lemon juice to pan.
  3. Cook until berries soften.
  4. Cut berries into small pieces.
  5. Add thickener mixture and stir.
  6. Cook until thick and glossy.
  7. Cool before using.

Notes

  1. Mix thickener with sugar first to prevent lumps.
  2. Use buttercream border to hold filling in cake.
  3. Store in fridge up to 2 weeks.
