Description
Tender keto Mongolian beef recipe inspired by PF Chang’s. Sweet, savory, and perfectly seared in 25 minutes.
Ingredients
1 tbsp avocado oil
2 tsp minced ginger
1 tbsp minced garlic
½ cup soy sauce or coconut aminos
½ cup water
¾ cup sugar-free sweetener
1½ lbs flank or flatiron steak
¼ tsp red pepper flakes
5 stems green onions (cut diagonal 2-inch pieces)
¼ tsp xanthan gum
Instructions
1. Heat oil, add ginger, garlic, and red pepper flakes. Stir 30 seconds.
2. Add soy sauce, water, and sweetener. Simmer until thickened.
3. Slice steak thinly against the grain.
4. Cook beef in skillet for 2-3 minutes per side.
5. Pour sauce over steak, stir in xanthan gum.
6. Add green onions, remove from heat, and serve over cauliflower rice.
Notes
Use flatiron steak for a tender, budget-friendly option.
Soy sauce can be replaced with coconut aminos.
Freeze raw ingredients (except green onions) for up to 3 months.
