Description

A savory mushroom appetizer with tender mushrooms, vegetables, and a tangy soy mustard dressing served warm or chilled.


Ingredients

Scale
  • 1 1/2 pounds white mushrooms, sliced
  • 1 medium carrot, grated
  • 1 medium onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1/3 cup soy sauce
  • 3 tablespoons vegetable oil
  • 2 tablespoons distilled white vinegar
  • 1 tablespoon whole grain mustard
  • 1 teaspoon salt
  • 1 teaspoon granulated sugar

Instructions

  1. Clean and slice all vegetables.
  2. Heat oil in a skillet over medium heat.
  3. Cook onion for 2–3 minutes.
  4. Add carrot and bell pepper and cook 2 minutes.
  5. Add mushrooms and cook 5–7 minutes.
  6. Whisk dressing ingredients in a bowl.
  7. Pour dressing over mushrooms and stir.
  8. Simmer on low for 3–5 minutes.
  9. Cool slightly and serve.

Notes

  1. Chilling improves flavor absorption.
  2. Cremini mushrooms add deeper flavor.
  3. Store refrigerated up to 3 days.
