Description

A hearty no-knead whole wheat bread baked in a Dutch oven with only four ingredients and minimal hands-on time.


Ingredients

Scale
  • 500 grams whole wheat flour
  • 2 teaspoons kosher salt
  • 1 teaspoon active dry yeast
  • 2 cups warm water

Instructions

  1. Combine flour, salt, and yeast in a large bowl.
  2. Add warm water and mix until no dry flour remains.
  3. Cover and let rise 8 to 18 hours at room temperature.
  4. Transfer dough to lightly floured parchment paper and shape into a round loaf.
  5. Preheat Dutch oven in a 450°F oven.
  6. Carefully place dough into hot Dutch oven.
  7. Bake covered for 30 minutes.
  8. Remove lid and bake 20 minutes more until golden brown.
  9. Cool on a wire rack for 30 to 45 minutes before slicing.

Notes

  1. Use fresh active dry yeast.
  2. Measure flour by weight for best results.
  3. Store at room temperature up to 3 days.
  4. Freeze up to 1 month.
