Description

A moist and tender peach quick bread filled with fresh peaches and warmly flavored with cinnamon, nutmeg, buttermilk, and vanilla.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg, or less to taste
  • 1/3 cup canola, vegetable, or corn oil
  • 2 large eggs, at room temperature
  • 1/2 cup buttermilk
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups chopped fresh peaches
  • Cooking spray for the pan
  • Optional sliced peaches for the top

Instructions

  1. Preheat the oven to 350°F.
  2. Coat an 8-by-4-inch loaf pan with cooking spray. Add a parchment sling, if desired.
  3. In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  4. In a separate bowl or large measuring cup, whisk together the oil, eggs, buttermilk, and vanilla.
  5. Pour the wet mixture into the dry mixture and stir gently until the batter just comes together. A few small dry spots are acceptable.
  6. Fold in the chopped peaches without overmixing.
  7. Transfer the batter to the prepared loaf pan and smooth the top.
  8. Add a few thin peach slices to the top, if desired.
  9. Bake for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  10. Cool the bread in the pan on a wire rack for 15 minutes.
  11. Remove the loaf from the pan and cool completely on the wire rack before slicing.

Notes

  1. Use ripe but firm peaches for the best texture.
  2. Pat very juicy peach pieces dry before adding them to the batter.
  3. Add 1/2 cup chopped pecans or walnuts without reducing the peaches.
  4. For mixed fruit, replace 1/2 cup of peaches with blueberries or raspberries.
  5. Cover the loaf loosely with foil if the top browns before the center finishes baking.
  6. Wrap leftovers tightly and refrigerate them for up to five days.
  7. Freeze individual slices in a freezer-safe bag for up to three months.
