Ingredients

1 lb beef (sirloin, tenderloin, or ribeye)

1 cup mushrooms (cremini, button, or baby bella)

1 medium onion, sliced

2 cloves garlic, minced

1 cup beef broth

1 tbsp Dijon mustard

1 tbsp Worcestershire sauce

1 cup sour cream (or crème fraîche)

Salt and pepper to taste

2 tbsp oil or butter (for cooking)
Instructions

Slice the beef thinly against the grain.

Heat a pan with oil or butter over medium-high heat. Cook beef in batches until browned, about 1 minute per side. Set aside.

In the same pan, add more oil or butter and sauté the onions until soft and golden.

Add mushrooms and cook until softened, then stir in garlic and cook for 1 minute.

Pour in beef broth and scrape the pan to release flavor bits. Stir in Dijon mustard.

Reduce heat to low, and gently stir in sour cream. Let the sauce simmer, but don’t let it boil.

Return the beef to the pan and cook for 5-10 minutes to blend flavors.

Season with salt and pepper to taste.
Notes
For a dairy-free version, use plant-based cream and broth.
For a quicker option, use ground beef instead of sliced strips.
Serve with egg noodles, mashed potatoes, or rice for a complete meal.
