Description
A classic Old Fashioned Peach Jam recipe made with fresh peaches, powdered pectin, sugar, and lemon juice for water bath canning.
Ingredients

- 4 cups peaches, chopped
- 1/4 cup lemon juice
- 1 box powdered pectin (1.75 oz)
- 5 cups granulated sugar
Instructions
- Peel and chop peaches.
- Combine peaches and lemon juice in a jam pot.
- Stir in powdered pectin.
- Bring to a rolling boil and cook 2 to 3 minutes.
- Mash peaches to desired texture.
- Add sugar and stir until dissolved.
- Return to a rolling boil.
- Boil exactly 1 minute.
- Ladle into prepared jars leaving 1/4 inch headspace.
- Apply lids and process in a water bath canner for 10 minutes.
- Cool jars for 12 to 24 hours and check seals.
Notes
- Makes 5 to 6 half-pint jars.
- Do not double the recipe.
- Process 15 minutes above 6000 feet elevation.
- Refrigerate unsealed jars.
- Store sealed jars up to 18 months.
