Description

A classic Old Fashioned Peach Jam recipe made with fresh peaches, powdered pectin, sugar, and lemon juice for water bath canning.


Ingredients

Scale
  • 4 cups peaches, chopped
  • 1/4 cup lemon juice
  • 1 box powdered pectin (1.75 oz)
  • 5 cups granulated sugar

Instructions

  1. Peel and chop peaches.
  2. Combine peaches and lemon juice in a jam pot.
  3. Stir in powdered pectin.
  4. Bring to a rolling boil and cook 2 to 3 minutes.
  5. Mash peaches to desired texture.
  6. Add sugar and stir until dissolved.
  7. Return to a rolling boil.
  8. Boil exactly 1 minute.
  9. Ladle into prepared jars leaving 1/4 inch headspace.
  10. Apply lids and process in a water bath canner for 10 minutes.
  11. Cool jars for 12 to 24 hours and check seals.

Notes

  1. Makes 5 to 6 half-pint jars.
  2. Do not double the recipe.
  3. Process 15 minutes above 6000 feet elevation.
  4. Refrigerate unsealed jars.
  5. Store sealed jars up to 18 months.
