Description

Hearty one-pot lasagna soup with beef, pasta, tomato broth, and creamy cheese toppings.


Ingredients

Scale
  • 1 lb ground beef
  • 3 garlic cloves, minced
  • 1/2 yellow onion, diced
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp dried basil
  • 1/2 tsp dried oregano
  • 1 tsp kosher salt
  • Black pepper to taste
  • 14 oz crushed tomatoes
  • 32 oz chicken broth
  • 1 cup water
  • 2 tsp tomato paste
  • 6 oz lasagna noodles
  • 1 cup frozen spinach
  • 1/4 cup heavy cream

Instructions

  1. Brown beef in a large pot and drain excess fat
  2. Add garlic, onion, and seasonings and cook until fragrant
  3. Stir in tomatoes, broth, water, paste, and noodles
  4. Simmer until noodles are tender
  5. Add spinach and cream and cook briefly
  6. Serve with cheese toppings

Notes

  1. Add extra broth if soup thickens
  2. Season to taste before serving
