Description

These playful Owl Rice Cakes combine crisp rice cakes, creamy peanut butter, banana, blueberries, apple, and carrot in an easy no-cook snack children can help assemble.

Ingredients

Scale
  • 4 plain round rice cakes
  • 1/2 cup creamy peanut butter or sunflower seed butter
  • 1 medium banana, cut into 8 rounds
  • 8 fresh blueberries
  • 1 small crisp apple, cut into 8 thin wedges
  • 1 small carrot, cut into 4 small triangles
  • 1/4 cup oat cereal rings, optional
  • 1 teaspoon lemon juice, optional
  • 1 tablespoon unsweetened shredded coconut, optional

Instructions

  1. Place the rice cakes on individual plates or a rimmed baking sheet.
  2. Wash and dry the blueberries and apple.
  3. Slice the banana into 8 rounds about 1/4 inch thick.
  4. Cut the apple into 8 thin wedges and brush them with lemon juice if desired.
  5. Peel the carrot and cut 4 small triangles for the beaks.
  6. Spread 2 tablespoons of peanut butter evenly over each rice cake.
  7. Place 2 banana rounds near the upper center of each rice cake.
  8. Dab a small amount of peanut butter onto each banana round, then press a blueberry into the center.
  9. Place 1 carrot triangle below the eyes to create the beak.
  10. Tuck 2 apple wedges into the sides of each rice cake to form wings.
  11. Arrange cereal rings and shredded coconut across the lower half for feathers, if desired.
  12. Serve immediately while the rice cakes remain crisp.

Notes

  1. Use sunflower seed butter when you need a nut-free alternative.
  2. Choose thick peanut butter or seed butter so the fruit stays in place.
  3. Prepare the toppings ahead, but assemble the owls shortly before serving.
  4. Always cut or modify small round foods according to the child’s age and chewing ability.
  5. Nutrition values are estimates based on one decorated rice cake.
