Description
This creamy one-pot garlic Parmesan chicken pasta combines tender chicken, broccoli, and pasta in a rich, velvety sauce that comes together in under 30 minutes.
Ingredients
2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1⁄2 teaspoon salt
1⁄4 teaspoon black pepper
4 cloves garlic, minced
4 cups low-sodium chicken broth
1 pound rigatoni pasta
12 ounces broccoli florets
1⁄2 cup heavy cream
1 cup Parmesan cheese
Salt and pepper to taste
2 tablespoons parsley
Instructions
1. Heat olive oil in skillet. Add chicken and seasonings; brown 5 minutes.
2. Add minced garlic; sauté 30 seconds.
3. Pour in broth; scrape browned bits. Add pasta and chicken.
4. Simmer 12 minutes, stirring occasionally.
5. Add broccoli; cook 4 minutes.
6. Remove from heat; stir in cream and Parmesan.
7. Season and garnish with parsley.
Notes
Use freshly grated Parmesan for the smoothest sauce.
Add a splash of broth when reheating to revive creaminess.
