Description

A simple baked vegetable casserole with zucchini, yellow squash, tomatoes, Parmesan cheese, and Italian seasonings.


Ingredients

Scale
  • 2 medium zucchini, sliced
  • 2 medium yellow squash, sliced
  • 5 medium tomatoes, sliced
  • 1/2 cup Parmesan cheese, shredded
  • 1/2 teaspoon black pepper
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • 1/2 teaspoon Italian seasoning
  • Salt to taste (optional)

Instructions

  1. Preheat oven to 375°F.
  2. Slice zucchini, yellow squash, and tomatoes evenly.
  3. Arrange vegetables in an alternating pattern in a baking dish.
  4. Sprinkle Parmesan cheese evenly over the vegetables.
  5. Season with black pepper, garlic powder, onion powder, Italian seasoning, and optional salt.
  6. Bake for 25 to 30 minutes until vegetables are tender.
  7. Remove from oven and let rest for a few minutes before serving.

Notes

  1. Use firm tomatoes for best texture.
  2. Freshly shredded Parmesan provides the best flavor.
