Description

Classic Southern peach cobbler with flaky pie crust, warm cinnamon spice, buttery peaches, and bright orange zest served with vanilla ice cream.


Ingredients

  • 1 stick unsalted butter
  • 2 ready-made pie crusts
  • 1 cup all-purpose flour for dusting
  • 3 tablespoons agave syrup
  • 1 1/4 teaspoons cinnamon
  • 3/4 teaspoon nutmeg
  • 4 cans sliced peaches, drained
  • 2 pinches kosher salt
  • 1 orange, zested
  • 2 eggs, whisked
  • Vanilla ice cream for serving

Instructions

  1. Preheat oven to 375 degrees Fahrenheit and grease a 13×9-inch baking pan with half the butter.
  2. Roll out pie crusts on a lightly floured surface until large enough for the pan.
  3. Melt remaining butter in a skillet over medium heat and stir in agave syrup, cinnamon, nutmeg, peaches, and salt.
  4. Simmer the peach mixture for 10 minutes and remove from heat.
  5. Pour half of the peach mixture into the prepared baking pan and top with half the orange zest.
  6. Place one pie crust layer over the peaches and bake for 15 minutes until lightly golden.
  7. Remove from oven and spread remaining peach mixture over the baked crust.
  8. Top with remaining orange zest and cover with the second pie crust.
  9. Brush the top crust with whisked eggs and sprinkle with cinnamon.
  10. Poke holes in the crust using a fork and bake for 40 minutes until golden brown and bubbling.
  11. Serve warm with vanilla ice cream.

Notes

  1. Drain peaches well before cooking to avoid a soggy crust.
  2. Allow the cobbler to rest for 15 minutes before serving.
  3. Cover loosely with foil if the crust browns too quickly.
