Description

Classic diner-style patty melts made with juicy beef patties, slow-caramelized onions, melted Swiss and Cheddar cheeses, and a tangy homemade secret sauce, all grilled on buttery rye bread.

Ingredients

Scale
  • 8 slices rye bread
  • 12 ounces 85/15 ground beef
  • 2 large yellow onions, thinly sliced
  • 4 slices Swiss cheese
  • 4 slices sharp Cheddar cheese
  • 3 tablespoons unsalted butter, softened
  • 2 tablespoons olive oil
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon pickle juice
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder

Instructions

  1. In a small bowl, mix mayonnaise, ketchup, Dijon mustard, pickle juice, paprika, and garlic powder until smooth, then refrigerate.
  2. Heat olive oil in a skillet over medium-low heat and slowly cook sliced onions, stirring occasionally, until deep golden brown and caramelized.
  3. In a bowl, gently mix ground beef with salt, pepper, and Worcestershire sauce, then form four thin oblong patties.
  4. Cook patties in a skillet over medium heat until browned on both sides, then remove and wipe excess grease.
  5. Butter one side of each slice of rye bread.
  6. Assemble sandwiches with Swiss cheese, beef patty, caramelized onions, secret sauce, and Cheddar cheese.
  7. Grill sandwiches over medium heat until bread is golden brown and cheese is fully melted, then flip and repeat.
  8. Slice diagonally and serve immediately.

Notes

  1. Cook onions slowly over medium-low heat to achieve proper caramelization without burning.
  2. Shape patties to match the bread for even bites throughout the sandwich.
  3. Reheat assembled sandwiches in a skillet or toaster oven to maintain crisp texture.
