Description

This Peach Baked Oatmeal is a creamy and healthy breakfast recipe filled with juicy peaches, cinnamon, and hearty oats.


Ingredients

  • 2 cups old-fashioned rolled oats
  • 1/2 cup unsweetened shredded coconut
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/3 cup maple syrup
  • 1 3/4 cups almond milk
  • 1/4 cup dairy-free Greek yogurt
  • 1 flaxseed egg
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted coconut oil
  • 2 1/2 cups diced peaches

Instructions

  1. Preheat the oven to 350°F and grease an 8-inch square baking dish.
  2. Prepare the flax egg by mixing flax meal with water and letting it sit for 10 minutes.
  3. Peel and dice the peaches into medium-sized chunks.
  4. Whisk together the flax egg, almond milk, yogurt, vanilla, coconut oil, and maple syrup.
  5. Stir in the oats, coconut, chia seeds, cinnamon, and salt.
  6. Fold the peaches into the mixture evenly.
  7. Pour the mixture into the baking dish and top with extra peach slices if desired.
  8. Bake for 35 to 50 minutes until the center is set and the top turns golden.
  9. Cool slightly before slicing and serving.

Notes

  1. Use fresh ripe peaches for the best flavor.
  2. Drain canned or frozen peaches well before using.
  3. Store leftovers in the refrigerator for up to 4 days.
  4. Serve warm with yogurt or almond milk.
