Description

This easy Peach & Basil Naan Bread Pizza combines ripe peaches, fresh mozzarella, fragrant basil, garlic oil, and an optional balsamic reduction for a quick summer dinner.

Ingredients

Scale
  • 2 large naan breads
  • 1 tablespoon olive oil
  • 1 garlic clove, finely minced or grated
  • 1/2 fresh peach, thinly sliced
  • 4 ounces fresh mozzarella, sliced and patted dry
  • 15 fresh basil leaves, roughly chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/2 cup balsamic vinegar, optional

Instructions

  1. Preheat the oven to 350°F.
  2. Lightly coat a large cookie sheet with nonstick cooking spray or line it with parchment paper.
  3. Stir the olive oil and garlic together in a small bowl.
  4. Place the naan breads on the prepared cookie sheet.
  5. Brush the garlic and olive oil mixture evenly over both naan breads.
  6. Arrange the mozzarella slices over the naan.
  7. Place the thinly sliced peaches over and between the mozzarella.
  8. Season both pizzas with salt and freshly ground black pepper.
  9. Bake for 20 to 25 minutes, checking after 17 minutes, until the cheese looks browned and bubbly and the naan edges look crisp.
  10. For the optional balsamic reduction, pour the balsamic vinegar into a small saucepan while the pizzas bake.
  11. Bring the vinegar to a boil, lower the heat, and simmer until it reduces and lightly coats a spoon.
  12. Remove the pizzas from the oven and let them rest for 2 to 3 minutes.
  13. Sprinkle the chopped basil over the pizzas.
  14. Drizzle with the optional balsamic reduction, slice, and serve.

Notes

  1. Pat fresh mozzarella dry before using it so the naan stays crisp.
  2. Choose a firm-ripe peach and slice it thinly for even cooking.
  3. Add the basil after baking to preserve its fresh flavor and color.
  4. Replace peaches with pears, apples, plums, nectarines, or tomatoes.
  5. Try goat cheese, Gouda, Gruyère, Asiago, fontina, or low-moisture mozzarella.
  6. Add cooked chicken, sausage, shrimp, prosciutto, mushrooms, peppers, or onions for a heartier variation.
  7. Store leftovers in an airtight container in the refrigerator for up to 3 days.
  8. Reheat leftovers in a 350°F oven for 7 to 10 minutes or in a 325°F air fryer for 3 to 5 minutes.
