Description

Peach Bruschetta with whipped ricotta, juicy tomatoes, fresh basil, garlic crostini, and balsamic glaze makes a bright summer appetizer for parties, cookouts, and casual dinners.


Ingredients

  • 1 baguette, sliced into 1/2-inch thick pieces
  • 1/4 cup unsalted butter, softened
  • 4 garlic cloves, minced and divided
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste
  • 1 pint tomatoes, chopped
  • 3 medium ripe peaches, diced
  • 2 tablespoons extra virgin olive oil
  • 1/2 lemon, freshly squeezed
  • 1 large handful fresh basil leaves, thinly sliced or chopped
  • 1 cup ricotta cheese
  • Balsamic glaze, for topping

Instructions

  1. Preheat the oven to 400°F.
  2. Slice the baguette into 1/2-inch thick pieces.
  3. In a small bowl, mash the softened butter with half of the minced garlic and a pinch of kosher salt.
  4. Spread the garlic butter over the baguette slices and arrange them on a baking sheet.
  5. Bake for 10 to 12 minutes, or until the crostini turn golden brown and crunchy.
  6. While the bread toasts, combine the chopped tomatoes, diced peaches, and remaining garlic in a bowl.
  7. Season the peach tomato mixture with kosher salt and freshly cracked black pepper.
  8. Drizzle the mixture with olive oil and fresh lemon juice, then toss gently.
  9. Let the topping sit while you prepare the ricotta.
  10. Add the ricotta to a food processor and blend until smooth and creamy.
  11. Transfer the whipped ricotta to a bowl.
  12. Stir the fresh basil into the peach and tomato mixture.
  13. Spread each crostini with whipped ricotta.
  14. Top each piece with 1 to 2 spoonfuls of the peach tomato mixture.
  15. Drizzle with balsamic glaze, if desired, and serve immediately.

Notes

  1. For a grilled version, heat the grill to high and grill the buttered bread for 1 to 2 minutes with the lid closed.
  2. For deeper garlic flavor, mash a few garlic confit cloves into the butter.
  3. Use ripe but firm peaches for the best texture.
  4. Assemble right before serving so the crostini stay crisp.
  5. Store the topping, whipped ricotta, and crostini separately if making parts ahead.
