- 1 baguette, sliced into 1/2-inch thick pieces
- 1/4 cup unsalted butter, softened
- 4 garlic cloves, minced and divided

- 1 pint tomatoes, chopped
- 3 medium ripe peaches, diced
- 2 tablespoons extra virgin olive oil
- 1/2 lemon, freshly squeezed
- 1 large handful fresh basil leaves, thinly sliced or chopped
- 1 cup ricotta cheese
- Balsamic glaze, for topping
Instructions
- Preheat the oven to 400°F.
- Slice the baguette into 1/2-inch thick pieces.
- In a small bowl, mash the softened butter with half of the minced garlic and a pinch of kosher salt.
- Spread the garlic butter over the baguette slices and arrange them on a baking sheet.
- Bake for 10 to 12 minutes, or until the crostini turn golden brown and crunchy.
- While the bread toasts, combine the chopped tomatoes, diced peaches, and remaining garlic in a bowl.
- Season the peach tomato mixture with kosher salt and freshly cracked black pepper.
- Drizzle the mixture with olive oil and fresh lemon juice, then toss gently.
- Let the topping sit while you prepare the ricotta.
- Add the ricotta to a food processor and blend until smooth and creamy.
- Transfer the whipped ricotta to a bowl.
- Stir the fresh basil into the peach and tomato mixture.
- Spread each crostini with whipped ricotta.
- Top each piece with 1 to 2 spoonfuls of the peach tomato mixture.
- Drizzle with balsamic glaze, if desired, and serve immediately.
Notes
- For a grilled version, heat the grill to high and grill the buttered bread for 1 to 2 minutes with the lid closed.
- For deeper garlic flavor, mash a few garlic confit cloves into the butter.
- Use ripe but firm peaches for the best texture.
- Assemble right before serving so the crostini stay crisp.
- Store the topping, whipped ricotta, and crostini separately if making parts ahead.
