Description

Fresh Peach Bruschetta with whipped ricotta, tomatoes, basil, garlic, and crispy crostini. A simple summer appetizer perfect for gatherings and entertaining.


Ingredients

  • 1 baguette, sliced into 1/2-inch rounds
  • 1/4 cup unsalted butter
  • 4 garlic cloves, minced
  • Kosher salt
  • Black pepper
  • 1 pint tomatoes, chopped
  • 3 medium ripe peaches, diced
  • 2 tablespoons extra virgin olive oil
  • Juice of 1/2 lemon
  • 1 handful fresh basil, sliced
  • 1 cup ricotta cheese
  • Balsamic glaze for serving

Instructions

  1. Preheat oven to 400°F.
  2. Mix butter with half the garlic and a pinch of salt.
  3. Spread garlic butter on baguette slices and arrange on a baking sheet.
  4. Bake for 10 to 12 minutes until golden and crisp.
  5. Combine tomatoes, peaches, remaining garlic, salt, pepper, olive oil, and lemon juice in a bowl.
  6. Let the mixture rest while preparing the ricotta.
  7. Blend ricotta until smooth and creamy.
  8. Stir basil into the peach mixture.
  9. Spread whipped ricotta on each crostini.
  10. Top with peach mixture and drizzle with balsamic glaze before serving.

Notes

  1. Use ripe but firm peaches.
  2. Assemble just before serving for the best texture.
  3. Whole milk ricotta creates the creamiest result.
