- 1½ cups finely diced peaches
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1½ teaspoons salt
- ½ cup powdered sugar
- ¼ cup butter-flavored shortening
- ¼ cup frozen butter, grated
- 1⅛ cups cold buttermilk
- 1 egg
- 2 tablespoons milk
- 1–2 tablespoons melted butter
- 1 cup powdered sugar for glaze
- 1 tablespoon melted butter for glaze
- 2 tablespoons milk for glaze
- ⅛ teaspoon vanilla extract
- Pinch of salt
Instructions
- Line a baking sheet with parchment paper.
- Pat diced peaches dry with paper towels.
- Whisk flour, baking powder, salt, and powdered sugar.
- Cut shortening and grated butter into dry ingredients.
- Toss peaches into flour mixture.
- Stir in cold buttermilk until dough forms.
- Turn dough onto floured surface and fold several times.
- Pat dough to 1-inch thickness and cut biscuits.
- Place on baking sheet and chill for 20 minutes.
- Preheat oven to 450°F.
- Brush tops with egg wash.
- Bake about 18 minutes until golden.
- Whisk glaze ingredients until smooth.
- Brush baked biscuits with melted butter.
- Cool slightly and glaze biscuits before serving.
Notes
- Frozen peaches work well when thawed and dried thoroughly.
- Do not overmix the dough.
- Keep ingredients cold for flaky layers.
- Store leftovers in an airtight container in the refrigerator.
