Description

A soft and fruity Peach Cake made with yellow cake mix, peach gelatin, real peaches, and a rich brown sugar frosting.


Ingredients

  • 1 (15-ounce) box yellow cake mix
  • 2 (3-ounce) boxes peach gelatin powder, not prepared
  • 4 large eggs
  • 1 cup light-tasting olive oil or vegetable oil
  • 1 (16-ounce) bag frozen sliced peaches, not thawed
  • 1/2 cup salted butter
  • 2 cups packed brown sugar
  • 2/3 cup heavy cream
  • 1 teaspoon vanilla extract
  • Ice water, for an ice bath only

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Grease a 9×13-inch cake pan well.
  3. In a large bowl or stand mixer, beat together the yellow cake mix, peach gelatin powder, eggs, and oil until smooth.
  4. Cut the frozen peach slices in half so they are bite-size.
  5. Fold the frozen peaches into the cake batter with a sturdy spoon.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 40 to 45 minutes, or until a toothpick inserted in the center comes out without wet batter.
  8. Cool the cake completely on a wire rack.
  9. Add the butter, brown sugar, and heavy cream to a 2-quart saucepan.
  10. Cook over medium-high heat, stirring, until the mixture reaches a full boil across the top.
  11. Boil for 1 minute, stirring frequently.
  12. Remove the pan from the heat and stir in the vanilla extract.
  13. Place the saucepan carefully in an ice bath, keeping water out of the frosting.
  14. Cool the frosting, scraping the sides occasionally, until it reaches room temperature and thickens.
  15. Beat the frosting with a hand mixer for 3 to 5 minutes, until thicker but still pourable.
  16. Spread the frosting over the cooled cake.
  17. Let the frosting set slightly before slicing and serving.

Notes

  1. Do not thaw the frozen peaches before adding them to the batter.
  2. Fresh or canned peaches may be used if they are drained very well.
  3. Light-tasting olive oil or vegetable oil both work well.
  4. Store covered at room temperature for 1 to 2 days, then refrigerate leftovers.
