Description

Soft cinnamon rolls filled with peach jam, cinnamon sugar, fresh peaches, crumb topping, and cream cheese glaze.


Ingredients

  • 1 1/2 cups fresh peaches
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice
  • 2 tsp cornstarch
  • 1 tbsp water
  • 1/2 cup thin peach slices
  • 2/3 cup water
  • 1/4 cup bread flour
  • 3 2/3 cups bread flour
  • 1/3 cup sugar
  • 2 tsp instant yeast
  • 1 tsp sea salt
  • 1/3 cup whole milk
  • 1/3 cup heavy cream
  • 1 egg
  • 1 tsp vanilla extract
  • 6 tbsp butter
  • 1/2 cup butter
  • 2/3 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp cinnamon
  • 3 tbsp melted butter
  • 4 tbsp butter
  • 2 oz cream cheese
  • 1 cup powdered sugar
  • 2 1/2 tbsp heavy cream

Instructions

  1. Cook peaches, sugar, and lemon juice until softened.
  2. Add cornstarch slurry and cook until thick.
  3. Prepare tangzhong and cool.
  4. Mix dough ingredients and knead until smooth.
  5. Add butter gradually and continue kneading.
  6. Rest dough for 30 minutes.
  7. Roll dough into a rectangle.
  8. Spread cinnamon sugar mixture and peach jam.
  9. Add peach slices and roll into 12 portions.
  10. Place in baking pan and rise until doubled.
  11. Prepare crumb topping and sprinkle over rolls.
  12. Bake at 325F for 30 to 40 minutes.
  13. Mix glaze ingredients and spread over warm rolls.

Notes

  1. Use thin peach slices for easier rolling.
  2. Cool the peach jam before assembly.
  3. Measure flour carefully.
  4. Store leftovers for up to 5 days.
