Description

This small-batch Peach Crumbles for Two recipe makes two warm individual peach desserts with juicy chopped peaches and a buttery oat topping.


Ingredients

  • 1 tablespoon light or dark brown sugar

  • 3 tablespoons old-fashioned rolled oats
  • 2 tablespoons all-purpose flour
  • 2 tablespoons light or dark brown sugar
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • 2 tablespoons cold unsalted butter, cut into small cubes

Instructions

  1. Preheat the oven to 375°F.
  2. Combine the chopped peaches, brown sugar, vanilla or almond extract, and cornstarch in a small bowl.
  3. Divide the peach filling evenly between two 6- to 8-ounce oven-safe ramekins or baking dishes.
  4. In a separate bowl, combine the oats, flour, brown sugar, cinnamon, and salt.
  5. Add the cold butter cubes and mix with a fork or your fingers until the topping forms crumbs.
  6. Sprinkle the oat topping evenly over the peach filling.
  7. Place the baking dishes on a lined, rimmed baking sheet to catch any bubbling juices.
  8. Bake for 15 to 20 minutes, or until the topping turns golden brown and the filling bubbles.
  9. Let the crumbles rest for a few minutes before serving.
  10. Serve warm, preferably with vanilla ice cream.

Notes

  1. Use two 6- to 8-ounce ramekins, mini skillets, or other small oven-safe dishes.
  2. You can bake the full recipe in one 10- to 12-ounce baking dish; add a few extra minutes as needed.
  3. If using frozen peaches, thaw them and pat them dry before mixing the filling.
  4. You can assemble the crumbles a few hours ahead, cover, refrigerate, and bake when ready.
  5. For extra sweetness and crunch, sprinkle the topping lightly with cinnamon sugar before baking.
