Description

Honey-sweetened Peach Honey Popsicles made with roasted peaches, whole milk yogurt, lemon juice, and vanilla for a creamy frozen summer treat.


Ingredients

  • 1 pound ripe peaches, about 3 medium, peeled and sliced into 1/2-inch wedges
  • 6 tablespoons honey, divided
  • Dash of sea salt
  • 2 cups full-fat plain yogurt, regular or Greek
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper.
  2. Place sliced peaches on the baking sheet. Toss with 2 tablespoons honey and a dash of sea salt, then spread the peaches in a single layer.
  3. Roast the peaches for 30 to 40 minutes, stirring halfway through, until soft, juicy, and fragrant. Watch the edges so the honey does not darken too much.
  4. While the peaches roast, whisk the yogurt, remaining 1/4 cup honey, lemon juice, and vanilla extract in a medium bowl. Chill the yogurt mixture until the peaches cool.
  5. Let the roasted peaches cool. Scrape the peaches and all pan juices into the yogurt mixture.
  6. Gently fold the peaches into the yogurt with a large spoon, leaving visible fruit swirls.
  7. Spoon the mixture into popsicle molds, pressing peach pieces down as needed. Insert popsicle sticks.
  8. Freeze for at least 4 hours, or until firm.
  9. To serve, run warm water around the outside of the molds for about 10 seconds, then gently remove the popsicles and enjoy immediately.

Notes

  1. Use ripe, fragrant peaches for the best flavor.
  2. Greek yogurt creates a thicker, tangier popsicle.
  3. Do not add hot peaches to the yogurt mixture because the texture can turn icy.
  4. Store popsicles in molds or wrap unmolded popsicles in parchment and freeze in a sealed freezer-safe bag for up to 2 months.
