Ingredients

Scale
  • 3 ripe peaches, peeled, pitted, and diced
  • 2 Ataulfo mangoes, peeled, pitted, and diced
  • 2 tomatoes, chopped
  • 1 bell pepper, finely diced
  • 1/4 red onion, finely diced
  • 2 garlic cloves, minced
  • 1 jalapeño, finely diced
  • 1 tablespoon cilantro, finely chopped
  • Juice of 1 lime
  • Sea salt to taste
  • Black pepper to taste

Instructions

  1. Peel and dice the peaches and mangoes into small cubes.
  2. Finely dice the tomatoes, bell pepper, red onion, jalapeño, and garlic.
  3. Add all chopped ingredients to a large bowl.
  4. Sprinkle cilantro over the salsa mixture.
  5. Squeeze fresh lime juice into the bowl.
  6. Mix everything together until evenly combined.
  7. Season with sea salt and black pepper to taste.
  8. Refrigerate for at least 20 minutes before serving.
  9. Serve chilled with chips, tacos, or grilled seafood.

Notes

  1. The salsa tastes better after resting in the refrigerator.

  3. Use ripe peaches and mangoes for the best sweetness.
  4. Store leftovers in an airtight container for up to 3 days.
