Description

This refreshing Peach Mousse Trifle features layers of creamy fresh peach mousse, soft vanilla cake, vanilla whipped cream, and fresh peach slices. It makes 4 pretty individual servings or 1 large trifle for a summer dessert.


Ingredients

  • 1 small vanilla cake or yellow cake, cooled
  • 4 fresh peaches, divided
  • 1 tablespoon plus 2 teaspoons lemon juice
  • 2 tablespoons cold water
  • 1 tablespoon plus 2 teaspoons unflavored gelatin powder
  • 4 tablespoons pure maple syrup, plus 1 tablespoon optional for whipped cream
  • 1 cup heavy whipping cream

Instructions

  1. Bake the vanilla cake according to recipe or package directions, then cool it completely.
  2. Peel and chop 3 peaches, then add them to a blender with lemon juice and 4 tablespoons maple syrup.
  3. Blend the peach mixture until smooth and light.
  4. Chop or slice the remaining peach for the trifle layer, sprinkle it with a little lemon juice, and refrigerate it until assembly.
  5. Add cold water to a small bowl, sprinkle gelatin over the top, and let it bloom for 5 minutes.
  6. Microwave the bloomed gelatin for 5 to 10 seconds, just until liquid.
  7. Pour the liquid gelatin into the peach puree and blend for 30 to 45 seconds.
  8. Chill the peach puree for about 1 hour, or until it starts to thicken.
  9. Beat the heavy cream with a hand mixer until stiff peaks form, then divide it between two bowls.
  10. Fold the thickened peach puree into one bowl of whipped cream until no streaks remain.
  11. Fold 1 tablespoon maple syrup into the second bowl of whipped cream, if desired.
  12. Cut the cooled cake into rounds or cubes.
  13. Layer peach mousse, cake, whipped cream, and fresh peaches in 4 serving glasses or 1 large trifle dish.
  14. Chill for at least 3 hours before serving.

Notes

  1. This recipe makes 4 individual servings or 1 small trifle.
  2. Use fresh peaches when they are in season for the best flavor and presentation.
  3. Frozen peaches can work if thawed and drained well.
  4. Honey or another sweetener can replace maple syrup.
  5. Store covered in the refrigerator for up to 2 days.
  6. Do not freeze the assembled trifle.
