Description

Soft Peach Muffins made with diced peaches, cinnamon, brown sugar, applesauce, and a buttery streusel topping. This easy homemade muffin recipe works for breakfast, snacks, brunch, or freezer prep.


Ingredients

  • 3 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup oil
  • 1/2 cup applesauce
  • 1/2 cup milk
  • 3 cups diced peaches
  • 3 large eggs, lightly beaten
  • 1 cup brown sugar
  • 1/3 cup brown sugar, for streusel topping
  • 1 tablespoon all-purpose flour, for streusel topping
  • 1 tablespoon cold butter, diced or shredded into small pieces
  • 1/4 teaspoon ground cinnamon, for streusel topping

Instructions

  1. Preheat oven to 375°F and line or grease a 12-cup muffin pan.
  2. In a large bowl, whisk together the flour, cinnamon, baking soda, and salt.
  3. In a separate bowl, stir together the oil, applesauce, vanilla extract, lightly beaten eggs, brown sugar, and milk.
  4. Pour the wet mixture into the dry mixture and stir just until combined.
  5. Gently fold in the diced peaches without overmixing.
  6. Fill each muffin cup halfway with batter.
  7. For the streusel topping, mix the brown sugar, cinnamon, and flour in a small bowl.
  8. Add the cold butter and work it in with a fork until the mixture forms coarse crumbs.
  9. Sprinkle the streusel topping evenly over each muffin.
  10. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
  11. Let the muffins cool in the pan for 10 minutes.
  12. Transfer the muffins to a wire rack and let them finish cooling before serving or storing.

Notes

  1. Store cooled muffins in an airtight container at room temperature for up to 4 days.
  2. To freeze, cool muffins completely, wrap each one individually, and place them in an airtight freezer-safe container or bag.
  3. Reheat thawed muffins in the microwave for 15 to 20 seconds or in a low oven until warm.
  4. Use ripe but firm peaches for the best flavor and texture.
  5. Avoid overmixing the batter so the muffins stay soft and tender.
