Description

Creamy peach custard bars with a buttery vanilla wafer crust. Perfect for summer gatherings, potlucks, and family desserts.


Ingredients

Scale
  • 2 1/2 cups crushed vanilla wafers
  • 1/4 cup granulated sugar
  • 1/2 cup butter, melted
  • 1 cup peach nectar
  • 1 cup all-purpose flour
  • 2 1/2 cups granulated sugar
  • 6 large eggs
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F.
  2. Line a 9×13-inch pan with parchment paper or foil and spray lightly.
  3. Mix vanilla wafer crumbs, 1/4 cup sugar, and melted butter.
  4. Press mixture evenly into prepared pan.
  5. Bake crust for 10 minutes and cool.
  6. Whisk peach nectar, flour, 2 1/2 cups sugar, and eggs until smooth.
  7. Pour filling over cooled crust.
  8. Bake 30 to 35 minutes until filling is set.
  9. Cool completely.
  10. Refrigerate if desired for easier slicing.
  11. Dust with powdered sugar before serving.

Notes

  1. Peach nectar is usually found in the juice aisle.
  2. Use a food processor to make fine cookie crumbs.
  3. Chill bars before slicing for cleaner cuts.
