Description

This buttery Peach Pecan Crisp combines juicy peaches with a brown sugar cinnamon oat topping and crunchy pecans. Serve it warm with vanilla ice cream for an easy summer dessert.


Ingredients

  • 5 cups sliced fresh peaches, peeled or unpeeled
  • 1/4 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/8 teaspoon salt
  • 1 tablespoon lemon juice
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup packed light or dark brown sugar
  • 2/3 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, very cold and cubed
  • 2/3 cup old-fashioned rolled oats
  • 2/3 cup chopped unsalted pecans

Instructions

  1. Preheat the oven to 350°F. Lightly grease a deep-dish 9-inch pie dish, 9-inch square pan, 10-inch cast iron skillet, or any 2 to 2.5-quart baking dish.
  2. Add sliced peaches, 1/4 cup flour, granulated sugar, 1/8 teaspoon salt, lemon juice, and vanilla extract to a large bowl. Stir gently until the peaches are evenly coated.
  3. Spread the peach filling evenly into the prepared baking dish.
  4. In a medium bowl, whisk brown sugar, 2/3 cup flour, cinnamon, and 1/4 teaspoon salt.
  5. Cut in the cold cubed butter with a pastry cutter, two forks, or your fingertips until coarse crumbs form.
  6. Fold in the oats and pecans, then sprinkle the topping evenly over the peach filling.
  7. Bake for 45 to 50 minutes, until the topping turns golden brown and the peach juices bubble around the edges.
  8. Cool for at least 10 minutes before serving warm, at room temperature, or cold.

Notes

  1. Fresh peaches give the best flavor and texture.
  2. Frozen peaches may be used if thawed, chopped, and blotted dry before mixing.
  3. Canned peaches are not recommended because they can turn too soft during baking.
  4. The topping can be prepared up to 2 days ahead and refrigerated until needed.
  5. Cover leftovers and refrigerate for up to 5 days.
  6. Baked crisp can be frozen for up to 3 months. Thaw overnight in the refrigerator and reheat in a 350°F oven until warm.
