Description

Peach upside down mini cakes are moist, buttery desserts topped with caramelized peaches, perfect for summer baking.


Ingredients

  • Non-stick cooking spray
  • 1 tablespoon unsalted butter
  • 6 teaspoons brown sugar
  • 3 fresh peaches
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2/3 cup granulated sugar
  • 1/3 cup unsalted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk

Instructions

  1. Preheat oven to 350°F and grease muffin pan
  2. Place butter and brown sugar into each muffin cup
  3. Arrange peach slices in each cup
  4. Mix dry ingredients in a bowl
  5. Beat butter and sugar until fluffy
  6. Add egg and vanilla and mix well
  7. Add flour mixture and buttermilk in stages
  8. Fold in diced peaches
  9. Divide batter into muffin cups
  10. Bake for 25 to 30 minutes
  11. Cool slightly and invert cakes
