Description

Creamy cheesecake filling, vanilla pudding, fresh peaches, and vanilla wafers layered into an easy no-bake summer dessert.


Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 8 ounces mascarpone cheese, softened
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 4 ounces Cool Whip, thawed
  • 2 small boxes instant vanilla pudding mix
  • 3 1/2 cups milk
  • 4 ounces Cool Whip, thawed
  • 6 peaches, peeled and sliced
  • 1/3 cup granulated sugar
  • Juice of 1 lemon
  • 1 (11-ounce) container vanilla wafer cookies, crushed

Instructions

  1. Mix cream cheese, mascarpone, vanilla, and sugar until fluffy.
  2. Fold in 4 ounces Cool Whip and set aside.
  3. Whisk pudding mix with milk for 2 minutes.
  4. Let stand 5 minutes and fold in remaining Cool Whip.
  5. Mix peaches with sugar and lemon juice and rest 10 minutes.
  6. Layer crushed cookies in a trifle bowl.
  7. Add pudding layer.
  8. Add peach layer.
  9. Add cheesecake layer.
  10. Repeat layers until ingredients are used.
  11. Chill at least 1 hour before serving.

Notes

  1. Use ripe peaches for best flavor.
  2. Chill before serving for cleaner layers.
  3. Store covered in refrigerator up to 3 days.
