Description

Buttery shortbread crust topped with creamy peach filling and a sweet crumble topping.


Ingredients

Scale
  • 3 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/4 teaspoon salt
  • 1 1/2 cups unsalted butter, chilled
  • 4 large eggs
  • 2 cups granulated sugar
  • 1 cup sour cream
  • 3/4 cup all-purpose flour
  • Pinch of salt
  • 2 pounds fresh peaches, sliced

Instructions

  1. Preheat oven to 350°F and grease a 9×13-inch baking pan.
  2. Combine flour, sugar, and salt for the crust mixture.
  3. Cut in chilled butter until crumbly.
  4. Reserve 1 1/2 cups of mixture for topping.
  5. Press remaining mixture into pan and bake 12 to 15 minutes.
  6. Cool crust for 10 minutes.
  7. Whisk eggs and sugar together.
  8. Add sour cream, flour, and salt.
  9. Fold in sliced peaches.
  10. Pour filling over crust.
  11. Sprinkle reserved crumb mixture on top.
  12. Bake 45 to 50 minutes until set.
  13. Cool for 1 hour.
  14. Refrigerate before slicing and serving.

Notes

  1. Use ripe but firm peaches.
  2. Bars slice best after chilling several hours.
  3. Store refrigerated.
