Description

Peanut Butter Banana Frozen Bark is a creamy, kid-friendly freezer snack made with yogurt, ripe bananas, peanut butter, and mini chocolate chips. It is quick to prep, fun to break into pieces, and perfect for summer snacks, simple desserts, or a special breakfast treat.


Ingredients

  • 2 ripe bananas, divided
  • 2 tablespoons honey, optional
  • 2 tablespoons natural-style peanut butter
  • 2 tablespoons mini chocolate chips

Instructions

  1. Line a 9×13-inch baking dish or rimmed baking sheet with parchment paper.
  2. Peel both bananas. Mash one banana in a medium bowl until mostly smooth, then slice the second banana into thin rounds.
  3. Add the yogurt to the mashed banana, then stir in the honey if using. Mix until creamy and evenly blended.
  4. Pour the banana-yogurt mixture onto the prepared pan and spread it into an even 1/4- to 1/2-inch layer.
  5. Warm the peanut butter in 20-second bursts if needed, then drizzle it over the yogurt and gently swirl it with a knife.
  6. Top with sliced banana and mini chocolate chips.
  7. Freeze for at least 5 hours, or overnight for the firmest texture.
  8. Lift the bark from the pan, break it into 16 pieces, and serve immediately.

Notes

  1. Store bark pieces in an airtight freezer-safe container for up to 1 month.
  2. Place parchment paper between layers to prevent sticking.
  3. Serve straight from the freezer because the bark softens quickly.
  4. For toddlers, let a piece sit for 1 to 2 minutes so the edges soften slightly before serving.
