Ingredients
Scale
- 1/2 cup creamy peanut butter
- 1/2 cup honey
- 1/2 teaspoon vanilla extract
- 4 cups plain Cheerios cereal
- Optional: pinch of fine salt
Instructions
- Line a baking sheet with parchment paper, or set out cupcake liners for individual portions.
- Add the peanut butter and honey to a large microwave-safe bowl.
- Microwave on high for 1 minute, then remove the bowl carefully and stir until the mixture looks smooth.
- Return the bowl to the microwave for another 30 to 45 seconds, until the honey mixture bubbles.
- Add the vanilla extract and stir well.
- Add the Cheerios and fold gently until the cereal is evenly coated.
- Drop spoonfuls of the mixture onto the prepared baking sheet or into cupcake liners.
- Let the bites set at room temperature for at least 30 minutes, or a few hours for a firmer texture.
- Serve and enjoy.
Notes
- Microwave times vary, so watch the honey mixture closely and heat it until it bubbles without burning.
- For a stovetop method, warm the peanut butter and honey over medium-low heat, bring to a gentle boil, and simmer for 2 minutes while stirring constantly.
- Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.
