Ingredients
-
1/2 cup unsalted butter, softened
-
1/2 cup granulated sugar
-
1/2 cup brown sugar, packed
-
1/2 cup peanut butter
-
1 large egg
-
1 tsp vanilla extract
-
1 1/4 cups all-purpose flour
-
3/4 tsp baking soda
-
Pinch of salt
Optional Add-Ins:
-
Chocolate chips
-
Peanut butter chips
-
Sea salt flakes for topping
Instructions
-
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
-
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
-
Add peanut butter, egg, and vanilla extract. Mix until smooth.
-
In a separate bowl, whisk together flour, baking soda, and salt.
-
Gradually add the dry ingredients to the wet mixture. Mix just until combined.
-
If dough is too soft, chill for 15–30 minutes.
-
Scoop 1 tbsp of dough per cookie. Roll into balls and place on baking sheet.
-
Use a fork to make a criss-cross pattern on top of each cookie.
-
Bake for 10–12 minutes, or until edges are set but centers are soft.
-
Let cool on the sheet for 2–3 minutes, then transfer to a wire rack.
Notes
For chewier cookies, use more brown sugar. For crispier ones, use more white sugar.
Chilling dough helps prevent overspreading and improves flavor.
Peanut butter cookies continue baking slightly after being removed from the oven—do not overbake.
Store in an airtight container at room temperature for up to 5 days or freeze for up to 2 months.
