Description

These easy Pecan Pie Bars combine a tender brown sugar shortbread crust with a rich, chewy pecan topping. They make a practical fall dessert for Thanksgiving, holiday parties, potlucks, and cookie trays.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup packed brown sugar
  • 1 cup unsalted butter, cold and cut into cubes
  • 5 large eggs
  • 1 cup dark corn syrup
  • ⅔ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt
  • 2 cups chopped pecans

Instructions

  1. Preheat the oven to 350°F. Lightly grease a 9-by-13-inch baking pan or line it with parchment paper.
  2. Combine the all-purpose flour and packed brown sugar in a medium mixing bowl.
  3. Add the cold cubed butter and cut it into the flour mixture with a pastry cutter until coarse crumbs form.
  4. Press the crust mixture firmly and evenly into the prepared baking pan.
  5. Bake the crust for 12 to 15 minutes, or until the edges look lightly golden.
  6. While the crust bakes, whisk the eggs, dark corn syrup, granulated sugar, vanilla extract, and salt until smooth.
  7. Stir the chopped pecans into the filling mixture.
  8. Remove the crust from the oven and reduce the oven temperature to 275°F.
  9. Pour the pecan mixture evenly over the warm crust.
  10. Bake for 50 minutes, or until the edges look firm and the center barely jiggles.
  11. Place the pan on a wire rack and cool the bars completely.
  12. Chill briefly for cleaner cuts, then slice into 24 bars and serve.

Notes

  1. Cut the butter into cubes and chill it before mixing the crust for the best texture.
  2. Bagged chopped pecans can reduce preparation time.
  3. Toast the pecans for 5 to 7 minutes for a deeper nutty flavor.
  4. Cool the bars completely before cutting them.
  5. Refrigerate leftovers in an airtight container for up to 5 days.
  6. Freeze individually wrapped bars in a freezer-safe container for up to 2 months.
  7. Thaw frozen bars overnight in the refrigerator and warm them briefly if desired.
