Description

Perfect Pumpkin Bread is a moist, warmly spiced quick bread made with pumpkin puree, brown sugar, oil, eggs, and fresh pumpkin spice. The recipe makes two tender loaves with a lightly crisp sugar crust.

  • Oil or baking spray, for preparing the pans
  • 3 tablespoons granulated sugar, divided, for coating and topping
  • 1 can pumpkin puree, 15 ounces or 425 grams
  • 4 large eggs, at room temperature
  • 1 cup neutral oil
  • 1 tablespoon bourbon or pure vanilla extract
  • 1 1/2 cups granulated sugar
  • 1 cup packed dark brown sugar
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon fine salt
  • 2 tablespoons pumpkin pie spice

Instructions

  1. Preheat the oven to 350°F and place a rack in the center.
  2. Grease two 9-by-5-inch loaf pans with oil or baking spray.
  3. Add 1 tablespoon of sugar to each pan and rotate the pans to coat the bottoms and sides.
  4. Whisk the pumpkin puree, eggs, oil, bourbon or vanilla, granulated sugar, and dark brown sugar in a large bowl until smooth.
  5. Whisk the flour, baking soda, baking powder, salt, and pumpkin spice in a separate bowl.
  6. Slowly add the dry ingredients to the wet ingredients while whisking gently.
  7. Switch to a spatula and stir the batter about 50 strokes, stopping when no dry flour remains.
  8. Divide the batter evenly between the prepared loaf pans and smooth the tops.
  9. Sprinkle the remaining tablespoon of sugar evenly over both loaves.
  10. Bake for 60 to 65 minutes, or until a toothpick inserted in each center comes out clean or with a few moist crumbs.
  11. Carefully remove the loaves from the pans and place them on a cooling rack.
  12. Cool completely before slicing.

Notes

  1. Use plain pumpkin puree rather than sweetened pumpkin pie filling.
  2. If the pumpkin puree looks watery, simmer it until thick and cool it before mixing.
  3. Fresh pumpkin pie spice produces the strongest flavor.
  4. Do not overmix the batter, or the finished bread may become tough.
  5. The bread develops fuller flavor and slices more cleanly the next day.
  6. Wrap cooled loaves tightly and freeze them for up to three months.
