Description

A creamy, comforting soup inspired by the classic Philly cheesesteak, made with tender beef, peppers, onions, and melted provolone cheese.


Ingredients

  • 1 pound thinly sliced beef
  • 1 medium onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded provolone cheese
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat and cook onion and bell pepper until softened.
  2. Add garlic and cook briefly, then add beef and cook until browned.
  3. Pour in beef broth and Worcestershire sauce and simmer for 10 minutes.
  4. Lower heat and stir in heavy cream, salt, and pepper.
  5. Add provolone cheese and stir until melted and smooth.
  6. Serve hot with parsley.

  1. Slice beef very thin for tenderness.
  2. Stir cheese slowly to avoid clumping.
