Ingredients

- 1 large red onion, thinly sliced
- 2 garlic cloves, thinly sliced
- 6–8 whole black peppercorns
- 1 teaspoon salt
- 1 teaspoon granulated sugar
- 3 tablespoons white vinegar
- 1 cup boiling water
Instructions
- Peel and thinly slice the red onion.
- Place onion in a heatproof jar with garlic and peppercorns.
- Sprinkle salt and sugar evenly.
- Pour in vinegar.
- Add boiling water to submerge onions.
- Stir gently and cool to room temperature.
- Refrigerate for at least 30 minutes before serving.

- Add bay leaf or chili flakes for variation.
