Description

Pineapple Chicken Rice combines tender chicken, sweet pineapple, jasmine rice, and savory soy ginger sauce for a balanced tropical dinner that is colorful, satisfying, and easy to prepare.


Ingredients

  • 1 pound chicken breast, cubed
  • 1 cup pineapple, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Cube the chicken breast and prepare the vegetables, pineapple, garlic, and ginger.
  2. Heat olive oil in a large skillet over medium heat and cook the chicken until golden brown and fully cooked. Remove and set aside.
  3. In the same skillet sauté the onion, garlic, and red bell pepper until softened and fragrant.
  4. Add the cubed pineapple and cook for about 2 minutes until slightly caramelized.
  5. Stir in jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper.
  6. Bring to a boil, reduce heat to low, cover, and simmer for 18 to 20 minutes until the rice is tender and the liquid is absorbed.
  7. Return the cooked chicken to the skillet and mix well so the flavors combine.
  8. Cook for another 2 to 3 minutes until heated through.
  9. Garnish with sliced green onions and sesame seeds before serving.

Notes

  1. Use fresh pineapple for the best flavor and texture.
  2. Rinse jasmine rice before cooking to prevent sticky rice.
  3. Allow pineapple to lightly caramelize to deepen the sweet and savory flavor.
  4. Add a squeeze of lime or extra soy sauce if you want a brighter or saltier finish.
  5. Store leftovers in an airtight container in the refrigerator for up to 3 days.
