- 1 1/2 cups granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup sour cream
- 3 cups all-purpose flour

- 1/2 teaspoon salt
- 13 canned pineapple slices, drained
- 13 maraschino cherries
- 1/2 cup butter, melted
- 1 cup light brown sugar, packed
Instructions
- Preheat oven to 350°F and prepare a mini round cake pan.
- Cream butter and granulated sugar until light and fluffy.
- Mix in eggs, vanilla extract, and sour cream until smooth.
- Stir in flour, baking powder, cornstarch, and salt until dough forms.
- Combine melted butter and brown sugar in a bowl.
- Add 1 tablespoon brown sugar mixture to each cavity and spread evenly.
- Place a pineapple slice in each cavity and add a cherry in the center.
- Top with 3 tablespoons of cookie dough and flatten gently.
- Bake for 25 minutes until golden brown and bubbling.
- Cool 10 minutes, invert onto wax paper, and cool completely before serving.
Notes
- Drain pineapple thoroughly to prevent excess moisture.
- Allow cookies to cool slightly before inverting from the pan.
- Store in an airtight container and enjoy within 3 days for best texture.
