Description

Bright blue gelatin cups topped with swirled whipped topping, Teddy Graham swimmers, and gummy life preservers make a playful no-bake dessert for pool parties, summer birthdays, and backyard gatherings.


Ingredients

  • 1 box, 6 ounces, Berry Blue Jell-O gelatin dessert mix
  • 2 cups boiling water
  • 2 cups cold water
  • 1 1/2 cups frozen whipped topping, thawed
  • 1 to 2 drops blue food coloring
  • 6 Teddy Honey Grahams, plus extras in case any break
  • 6 gummy Lifesavers
  • 6 clear plastic dessert cups, about 8 ounces each
  • Additional whipped topping, optional

Instructions

  1. Place six clear plastic cups on a rimmed baking sheet or sturdy tray.
  2. Pour the Berry Blue Jell-O powder into a large heat-safe mixing bowl.
  3. Add 2 cups boiling water and whisk for about 2 minutes, or until the gelatin dissolves completely.
  4. Stir in 2 cups cold water until combined.
  5. Divide the gelatin mixture evenly among the cups, filling each cup about two-thirds full.
  6. Transfer the tray to the refrigerator and chill for at least 4 hours, or overnight, until firm.
  7. Place about one-third of the thawed whipped topping in a small bowl.
  8. Fold 1 to 2 drops of blue food coloring into the topping to create pale blue streaks.
  9. Spoon or pipe the white and blue whipped topping over the chilled gelatin.
  10. Gently swirl the topping to resemble foamy pool water.
  11. Slide each Teddy Graham halfway through a gummy Lifesaver to create a swimmer with a life preserver.
  12. Place one decorated Teddy Graham on each cup immediately before serving.
  13. Serve the cups cold.

Notes

  1. Prepare the gelatin cups up to 2 days ahead, but add the toppings and decorations shortly before serving.
  2. Use a sturdy tray to move the liquid gelatin cups safely into the refrigerator.
  3. Do not place the cookies on warm or unset gelatin because they may sink and soften.
  4. Gummy bears can replace Teddy Grahams when you need decorations that resist moisture longer.
  5. Use smaller 5-ounce cups to create additional party servings.
  6. Store undecorated gelatin cups covered in the refrigerator for up to 4 days.
  7. Eat fully decorated leftovers within 1 day for the best texture.
  8. Do not freeze the gelatin cups.
