Description

Soft baked piroshki filled with creamy mashed potatoes and cheese, made with classic yeast dough.


Ingredients

Scale
  • 1 1/2 cups warm water
  • 1 tablespoon granulated sugar
  • 1 3/4 teaspoons active dry yeast
  • 1 teaspoon salt
  • 3 3/4 cups all-purpose flour
  • 3 tablespoons vegetable oil
  • 5 medium russet potatoes, boiled and mashed
  • 5 oz feta cheese or bryndza, crumbled
  • 2 tablespoons unsalted butter

Instructions

  1. Dissolve sugar and yeast in warm water and let foam.
  2. Mix in salt, oil, and half of the flour.
  3. Add remaining flour and knead until smooth.
  4. Let dough rise until doubled.
  5. Mix potatoes, cheese, and butter for filling.
  6. Divide dough, fill, and seal buns.
  7. Bake at 375°F until golden.

Notes

  1. Bryndza can be replaced with feta cheese.
  2. Brush baked buns with butter for softer crust.
  3. Piroshki can be baked or pan-fried.
  4. Store leftovers in the refrigerator for up to 3 days.
