Description

Crispy oven-roasted Potato Hearts made with seasoned russet potatoes, perfect for Valentine’s Day snacking or sharing.


Ingredients

  • 36 large Russet potatoes, peeled
  • 1/4 cup olive oil
  • 2 teaspoons salt
  • Pepper to taste
  • 1/2 teaspoon garlic powder
  • 2 teaspoons rosemary
  • 1/2 teaspoon paprika
  • Fresh Parmesan cheese (optional)

Instructions

  1. Preheat oven to 400°F and prepare baking sheet.
  2. Simmer sliced potatoes in salted water for 3–4 minutes.
  3. Cool slightly and cut into heart shapes.
  4. Toss with olive oil and seasonings.
  5. Roast 22–25 minutes, flipping halfway, then broil briefly if desired.
