Potato Zrazy are traditional Eastern European stuffed potato patties filled with savory mushrooms and onions, then pan-fried until crisp on the outside and tender inside. This vegan version delivers rich flavor, comforting texture, and simple ingredients ideal for a hearty homemade meal.
Ingredients
- Cooked potatoes, peeled – 2.2 lb
- Cornstarch – 2 tablespoons
- Salt – to taste
- Black pepper – to taste
- Paprika – to taste
- Cooked mushrooms, finely chopped – 1 1/2 to 1 3/4 lb
- Onions, finely chopped – 2 large
- Vegan mayonnaise – 1 tablespoon
- Hot red pepper – to taste
- Vegetable oil – for greasing hands and pan
Instructions
- Drain cooked potatoes completely and return them to low heat for 1–2 minutes to remove excess moisture.
- Mash the potatoes until smooth.
- Add cornstarch, salt, black pepper, and paprika, then mix until elastic.
- Sauté chopped onions in a lightly oiled skillet over medium heat until soft.
- Add chopped mushrooms and season with salt, black pepper, hot red pepper, and paprika.
- Cook until all moisture evaporates, then stir in vegan mayonnaise and remove from heat.
- Grease hands with oil and flatten a portion of potato dough into a patty.
- Add mushroom filling to the center, seal, and shape into an oval or round patty.
- Cook in a lightly greased skillet over medium-high heat until golden on both sides.
Notes
- Grease hands with oil to prevent sticking.
- Potato starch can be used instead of cornstarch.
- Store leftovers in the refrigerator for up to 3 days and reheat in a skillet.
